Il corso prevede una sezione di base nel quale verranno fornite le nozioni
relative ai diversi
metodi genetico-molecolari per la caratterizzazione di specie animali e
vegetali, con
particolare riguardo alla descrizione di quelli più utili per la valutazione di
specie utilizzate per
l’alimentazione umana. Nella seconda sezione viene affrontata
l’applicazione delle
metodiche per caratterizzazione genetica di materie prime atte alle
produzioni alimentari,.
analiisi, e valutazione dei prodotti alimentari, applicando tecniche
convenzionali ed avanzate
di analisi ed elaborazione dati ne i processi della filiera alimentare;
identificazione ed analisi
delle frodi alimentari e OGM.

Conoscenze acquisite nel corso di Genetica. Lo studente deve possedere
le conoscenze fondamentali su:struttura del DNA e RNA. Struttura gene
eucariotico; trascrizione e traduzione.

Gli argomenti del corso saranno trattati con l’ausilio di
presentazioni in Power Point, filmati video, esercitazioni in aula o
laboratorio, lettura di articoli scientifici. Risultati di apprendimento attesi:

L’esame consiste nel superamento di una
prova orale.Durante lo svolgimento del corso sono

The aim of this course is to provide (in a first section) the concepts
relating to the various genetic-molecular methods for the
characterization of plant and animal species, with particular regard to the
description of those most useful for the evaluation of species used for
human food. The second section dealt with the application of methods for
genetic characterization of raw materials suitable for food production,
analysis and evaluation of food products, by applying conventional and
advanced techniques of analysis and data processing data it processes in
the food chain; identification and analysis of food fraud and GMOs.
