Principali tecniche del DNA ricombinante: frammentazione del DNA, enzimi di restrizione, plasmidi come vettori, southern blot, PCR e sue applicazioni. Sequenziamento automatizzato del DNA. Sequenziamento di 2° generazione.PCR quantitativa Real-Time: le chimiche fluorescenti. Course objectives | The aim of this course is to provide (in a first section) the concepts relating to the various genetic-molecular methods for the characterization of plant and animal species, with particular regard to the description of those most useful for the evaluation of species used for human food. The second section dealt with the application of methods for genetic characterization of raw materials suitable for food production, analysis and evaluation of food products, by applying conventional and advanced techniques of analysis and data processing data it processes in the food chain; identification and analysis of food fraud and GMOs. |
