    Contenuti

    Il corso riguarda le modalità di trasferimento e trasformazione degli inquinati nell’ambiente nonché le tecniche di rivelazione.
    Il corso è diviso in due moduli tenuti dal Dott. Stefano Salvestrini e dal Prof. Gaetano Malgieri.
    Gli argomenti trattati dal dott. Stefano Salvestrini sono:
    1. Destino degli inquinanti nei principali comparti ambientali: acqua, aria, suolo, sedimenti.
    2. Processi di trasporto
    3. Processi di degradazione biotica ed abiotica
    Gli argomenti trattati dal prof. Gaetano Malgieri sono
    1. Qualità degli alimenti.
    2. Principali Tecniche analitiche e strumentali per l’identificazione degli inquinanti.
    3. Tecniche di estrazione da matrici alimentari.
    4. Accoppiamento della cromatografia liquida con la spettrometria di massa per la ricerca di inquinanti negli alimenti
    5. La spettroscopia NMR nell’analisi degli alimenti.
    6. Casi studio.

    Obiettivi formativi

    Apprendimento delle modalità di trasferimento e di trasformazione di un inquinante nell’ambiente nonché sulle tecniche di analisi disponibili per il loro riconoscimento.
    Lo studente acquisirà inoltre conoscenze sugli aspetti principali dell’analisi della qualità dei prodotti alimentari e sulle più moderne tecniche analitiche e strumentali per il riconoscimento degli inquinanti negli alimenti.
    Nello specifico lo studente sarà in grado di:
    • conoscere le principali classi di inquinanti delle varie matrici
    • dedurre le proprietà chimico-fisiche e prevederne la reattività
    • ragionare criticamente per poter applicare la corretta tecnica analitica
    • conoscere limiti e potenzialità di ciascuna tecnica analitica.

    Prerequisiti

    Conoscenze e abilità fornite dal corso di Chimica generale ed inorganica.

    Metodologie didattiche

    Il modulo tenuto dal Dott. Stefano Salvestrini è articolato in 48 ore di lezioni frontali nelle quali verranno esposti i principi teorici del corso e verranno proposti e svolti svariati esercizi numerici per modellizzare la dispersione e la reattività degli inquinanti nei vari comparti ambientali

    Il modulo tenuto dal Prof. Gaetano Malgieri è articolato in 16 ore di lezioni frontali svolte dalla docente in cui verrà esposta la teoria con molteplici casi studio.
    Nel suo lavoro personale lo studente dovrà assimilare conoscenze e concetti base delle diverse tecniche analitiche e imparare ad applicare i concetti appresi ai vari casi studio proposti. Per ciascuna tecnica analitica saranno proposti casi studio ad hoc nello svolgimento dei quali lo studente avrà modo di comprendere i limiti e i vantaggi dell’utilizzo di ciascuna tecnica sperimentale per la ricerca ed il monitoraggio degli inquinanti nelle varie matrici.
    Lo studio a casa è sottoposto a chiarimenti e a correzioni da parte della docente negli orari di ricevimento.

    Metodi di valutazione

    L’esame consta di una prova scritta preliminare riguardante esercizi di chemiodinamica da superare con almeno 18/30. Una volta superata la prova scritta, verrà eseguita una prova orale, da superare con votazione di almeno 18/30, durante la quale lo studente dovrà esporre i principali concetti affrontati nel corso e applicare le conoscenze acquisite alla risoluzione di casi studio.
    L’esame orale è volto a valutare la capacità di ragionamento e di collegamento tra i vari argomenti del corso ed è costituito da domande sulla parte teorica del programma, in cui sarà valutata la capacità di organizzare l’esposizione, la padronanza della materia attraverso la capacità di espressione e di collegamento tra i diversi argomenti del programma. Saranno, inoltre, discussi gli aspetti pratici e teorici di un caso studio.
    La valutazione finale sarà espressa in trentesimi.
    Su richiesta dello studente la prova orale potrà essere suddivisa in due parti, la prima riguardante gli argomenti trattati dal Prof. Salvestrini e la seconda riguardante la parte illustrata in aula dalla Prof. Isernia.

    Breve panoramica generale sulla problematica della qualità degli alimenti.
    Tecniche analitiche e strumentali per l’identificazione degli inquinanti. Tecniche di estrazione da matrici alimentari. Tecniche di estrazione solido-liquido. Macerazione. Tecniche di estrazione liquido-liquido in continuo e in discontinuo. Estrazione con imbuto separatore. Estrazione con percolatori. Tecniche di estrazione in fase solida (SPE, SPME).
    Accoppiamento della cromatografia liquida con la spettrometria di massa: strumenti HPLC/MS: analisi quali-quantitative di inquinanti nelle matrici alimentari.
    La spettroscopia NMR nell’analisi degli alimenti. Casi studio.

    The course deals with the mode of transport and transformation of pollutants in the environment and their detection techniques.
    The couse is divided in two modules covered by Dr. Stefano Salvestrini and Prof. Gaetano Malgieri, respectively.
    The topics covered by Dr. Stefano Salvestrini are:
    1. Fate of pollutants in the major environmental phases: water, air, soil and sediments.
    2. Transport processes
    3. Biotic and abiotic degradation processes.
    The topics covered by Prof. Gaetano Malgieri are:
    1. Food quality.
    2. Main analytical and instrumental techniques for the identification of pollutants.
    3. Extraction techniques from food matrices.4. Coupling of liquid chromatography with mass spectrometry for the detection of pollutants in food
    5. NMR spectroscopy in food analysis.
    6. Case studies.

    Course objectives

    Learning mode of transport and transformation of pollutants in the environment as well as the available analysis techniques for their identification.
    The student will also acquire knowledge about the analysis of the food quality and the main analytical and instrumental techniques for the detection of food contaminants.
    Specifically, the student will be able to:
    • know the main classes of pollutants of the various matrices
    • deduce the chemical-physical properties and predict their reactivity
    • to reason critically in order to apply the correct analytical technique
    • know the limits and potential of each analytical technique.

    Prerequisites

    Knowledge and skills furnished by the course of General and Inorganic Chemistry.

    Teaching methods

    The module of Dr. Stefano Salvestrini consists of 48 hours of lectures in which the theory and associated numerical exercises will be exposed and solved for modeling transport and reactivity of pollutants in different environmental phases.

    The module of Prof. Gaetano Malgieri is divided into 16 hours of lectures conducted by teacher in which the theory will be exposed with multiple case studies.
    In his personal work the student will have to assimilate knowledge and basic concepts of the different analytical techniques and learn to apply the concepts learned to the various case studies proposed. For each analytical technique ad hoc case studies will be proposed in which the student will be able to understand the limits and the advantages of the use of each experimental technique for the research and monitoring of pollutants in the various matrices.
    Home study is subject to clarification and corrections by teacher during office hours.

    Evaluation methods

    The exam consists in passing a preliminary written test regarding chemiodynamics exercises, with a vote of at least 18/30. Once passed the written test, an oral test will be carried out, to be passed with a vote of at least 18/30, during which the student will have to present the main concepts addressed in the course and apply the knowledge acquired to the resolution of case studies.
    The oral exam is aimed at evaluating the reasoning and connection skills between the various topics of the course and consists of questions on the theoretical part of the program, in which the ability to organize the exhibition, the mastery of the subject through the ability to express and connect the different topics of the program. The practical and theoretical aspects of a case study will be also discussed.
    The final evaluation will be expressed in thirtieths.
    Upon each student request the oral exam can be divided into two parts, the first concerning the topics covered by Prof. Salvestrini and the second concerning the part illustrated in the classroom by Prof. Isernia.
