| Metodi didattici | Lezioni frontali. |

| Contents | Food constituents and their modifications during the technological processing. Main enzymes involved in the agri-food biotechnologies. Protein-based biochemistry methodologies for food analysis. |
| Textbook and course materials | - Carmen Gigliotti, Roberto Verga - Biotecnologie Alimentari - Piccin Nuova Libraria |
| Course objectives | The course aims to provide the foundational concepts of food biochemistry. |
| Prerequisites | Knowledge and skills acquired during the course of Biological Chemistry. |
| Teaching methods | Frontal lessons. |
| Assessment methods | The achievement of the course objectives is certified by passing an examination graded on a 30-point scale. The examination normally consists of an oral interview. Alternatively, subject to prior agreement with the instructor, students may request to take a written exam. This written test will consist of 30 multiple-choice questions, which will also require students to write and graphically represent chemical structures and biochemical reactions. Both examination methods are equivalent and designed to assess, with equal rigor, the level of theoretical knowledge, critical thinking skills, and mastery of technical and scientific terminology. |
